Menu Monday Link Up
It's that time again. Time for Menu Monday! I've really enjoyed this link up and it's so nice to know our meals for the entire week. It keeps me on track and organized.

All of last weeks meals were a success. Many made the "make this again" list. The Italian Sausage Rigatoni made enough for us to enjoy several meals from it, as did the Skinnytaste Shepards Pie.
This week:
Monday: Zesty Slow Cooker BBQ Chicken (Perfect for sandwiches), Mac and Cheese, Green Beans
Tuesday: Mexican Stuffed Shells via pinterest and Corn
Wednesday: Leftovers
Thursday: Mahi Mahi (for me)/Tuna (for Brian/Mason) Burgers, Baked Beans, Spinach Salad
Friday: Pizza night
Saturday: Either Stir-fry or Date night (pending babysitter!)
Sunday: Breakfast Night

Niece or Nephew??
My brother and sister-in-law found out yesterday the gender of their baby!!! I was so excited to hear from them this morning. I prayed last night that Baby P would "show their goods" and cooperate. Looks like my prayers were answered because....

We are ecstatic that Mason will have a play buddy and I am so happy I'm going to be an Aunt to a little boy!! I'm going to have a NEPHEW!!!! We can not wait to meet this little guy.
Ethan Gray, we love you already and can't wait to meet you towards the end of August!
And yes, they are carrying on the family name too and using Gray as a middle name. Love it!

From Last Week: Everything was a hit! Seriously, it was a great week for meals in our household. Mason and Brian loved everything. Perhaps the biggest hit was the baked tortellini.
This week:
Monday: Fend For Yourself Night. - Brian works late. I am working the consignment sale at Mason's school and Mason will be with my parents. Hence, fend for yourself.
Tuesday: Daddy/Mason Dinner Night as I will be working/shopping the consignment sale.
Wednesday: Italian Sausage Rigatoni, Garlic Bread, Salad
Thursday: Mahi Mahi or Tuna Burgers, Pasta Salad, Fruit
Friday: Pizza Night.
Saturday: Shepard's Pie, Lightened Up via Skinnytaste, Fruit

Valentine's Day Goodies
Yes, I realize it's March. Yes, I realize Valentine's Day was over a month ago. Yes, I realize I am a little behind. I've been busy wrestling an 18 month old while growing a baby a baby at the same time. Cut me some slack?
For Valentine's Day, we decided to send Mason's little buddies some treats in the mail. After a quick trip to Target, where we hit up the dollar bin, we came back home stocked with our supplies. While Mason napped, I went to work on assembling the goodies.
For the girls, I found these cute little mailboxes. At only $1, they were too cute to pass up! Looking back, I wish I had stocked up when I could.
The other goodies for stuffing the mailboxes... cute socks, chap sticks and chocolate goodness!
I had plain white stickers that I decided to put on one end of the mailboxes to give it a little more personalized touch..

We couldn't forget the boys though. Unfortunately I don't have a picture but the two boys, Max and Archer, both received Valentines Day bibs!
While they gifts were nothing big by any means, what kid doesn't love receiving mail? We were happy to send a little happiness in the mail and show our love for our buddies!

Before I post this weeks menu, a few comments about our meals last week. I did not eat the Crock pot Italian Chicken because honestly, it did not look appealing to me whatsoever. Brian said it was ok, but then again, he isn't picky. So be warned and try at your own risk.
Now onto this week menu...
Monday: Moravian Chicken Pie with Sweet Potato Fries and Green Beans
Tuesday: Baked Tortellini (via pinterest) with Salad
Wednesday: Mahi Mahi Burgers, Corn, Salad

Friday: PIZZA!
Saturday: Green (in Honor of St. Patrick's Day) Breakfast Night

Pinspired - Crock Pot Chicken Tacos
Today I'm linking up with Kodi from a brighter yellow for her weekly Pinspired post.

I found a recipe for chicken tacos on pinterest and thought I'd give it a try. Everything is cooked in the crock pot so it was very simple and easy. Throw it all in and forget about it until dinner time. I love that kind of cooking on days when Mason and I are busy and can't devote much time to the kitchen.
This is the "post" that I pinned..
Crockpot Chicken Tacos
Recipe from Tasty Kitchen
1 envelope Taco Seasoning
6 pieces Boneless, Skinless Chicken Breasts
1 jar Salsa (16 oz)
Dump everything into a crock pot and give it a little stir to blend the seasoning with the salsa. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork.
For tacos, serve the chicken with soft flour tortillas, lettuce, shredded cheese and sour cream.
This couldn't have been any easy. The tacos were delicious and since it made a lot, we had plenty left over for lunches the next day.

Semi-Wordless Wednesday: February Snow
We randomly got snow one February night/morning. Since we have had such a mild winter, Mason and I made the most of it and played in the snow. Poor fella doesn't even have a snowsuit but no worries, the inch of snow didn't call for one. :)
Less than two hours later, all the snow melted and the sun was shining. The next day it was 62 degrees. Welcome to the South!

Menu Monday Link Up
I'm back again this week for our Menu Monday Link Up with Rachel from In No Simple Language.

Last week was a big success! Both Brian and Mason approved of all the meals. Two of the big hits were the Crockpot Cheesy Chicken Spaghetti and the Oven Baked Hot Dogs. We ate the spaghetti for lunch and a meal one other night as well. It makes so much!
Warning: I am no photographer and both meals tasted better than they look :)
This week the menu is as follows:
Monday: Crockpot Italian Chicken found via pinterest served with a spinach salad
Tuesday: Breakfast Night! Eggs, Bacon, Waffles!!
Wednesday: Turkey Burgers, Green Beans, Sweet Potato Fries
Thursday: Taco Night
Friday: Our traditional Pizza night
Saturday/Sunday: Leftovers or Out to eat.
My goal this week is to use up some of the food that we currently have in the pantry and refrigerator so a lot of basic, simple meals this week.
